目的分析2010年滦县餐饮服务单位餐饮具消毒监测结果,查找影响餐饮具消毒效果的主要原因,为餐饮服务监管部门加强餐饮服务单位管理提供依据。方法采取随机抽样的方法抽取餐饮服务单位餐饮具样品进行微生物检测。结果 2010年滦县餐饮服务单位餐饮具消毒合格率仅69.31%,且餐饮具消毒合格率存在地区与量化管理级别差异。结论滦县餐饮服务单位餐饮具消毒效果不容乐观,消毒方法、卫生管理人员素质、餐饮具保洁设施是影响餐饮具消毒效果的主要方面。
Objective To analyze the results of disinfection monitoring of tableware in Luanxian food service units in 2010 and find out the main reasons that affect the disinfection effect of tableware in order to provide basis for catering service regulators to strengthen the management of catering service units. Methods A random sampling method was adopted to extract food and beverage samples of catering service units for microbiological tests. Results 2010 Luanxian catering service units disinfection pass rate of only 69.31%, and the passing rate of tableware disinfection there is a difference between regional and quantitative management level. Conclusion Luanxian catering service units can not be optimistic about the disinfection effect of tableware, disinfection methods, the quality of health management personnel, catering facilities, cleaning facilities are the main aspects of the disinfection effect of tableware.
