酒保是中国古代饮食市场上接待顾客的侍应人员。它的称谓变化较大,先秦时期大多叫做“酒保”;汉魏六朝又出现“佣”、“佣保”、“酒家保”等称呼;隋唐宋元时期有了“过卖挡头”、“店家”、“行菜者”、“下番人”等名称;明清和近代一般又改称“店小二”、“店伙”、“小伙计”、“堂倌”等。古往今来,他们主要从事门前迎宾、安座问好、提瓶献茶、介绍菜单、斟酒布菜、结算账目、送客出门、清席检场等劳务,有时还要送菜上门、催讨欠款或者是承办客人临时委托的事情(如购物、请人),相当琐碎。
