  The sweet potato vermicelli is one of the favorite food in China.But since the machining technology is behindhand,the quality of most sweet potato vermicelli is poor,which needs to be improved.Based on the characteristics of sweet potato vermicelli,the research presented in this article improves the technology and develops the machining equipments,therefore improves the quality of vermicelli.The technology of vacuum doffing gas in water bath was used to keep the paste at a stable temperature after being churned up,and also made the releasing process much more efficient.
