Papaya (Carica papaya L) is widely distributed in the world,especially,in tropical regions,being Hawaii (United States) and Brazil the most important producers.The last one,is the responsible for 30 percent of the total world production and the third major exporter.To increase the availability and consume,some papaya processed products have been developed such as bar of cereal,yogurt,soybean drinks,desserts for children,and others.
