甲基汞毒性很强,几乎完全可被人体吸收,并对神经细胞具有选择性的毒性,其排泄缓慢,在人体内的半减期约70天左右,生物体内的半减期可长达1000天。甲基汞在鱼体内具有很强的富集作用,人体甲基汞的摄入主要来源于水产品的污染。近年来,我国有些地区水产品也存在甲基汞的污染。因此在总汞卫生标准的基础上,探讨制订水产品甲基汞允许限量,在食品卫生方面具有重要意义。
Methylmercury is very toxic, almost completely absorbed by the body, and has selective toxicity to nerve cells. Its excretion is slow. The half-life of methylmercury is about 70 days and the half-life of the organism can be as long as 1000 day. Methylmercury has a strong enrichment effect in fish, and the intake of methylmercury mainly comes from the contamination of aquatic products. In recent years, there are some methylmercury pollution in aquatic products in some areas of our country. Therefore, on the basis of the total mercury health standards, it is of great significance in the field of food hygiene to explore the allowable limit of methylmercury in aquatic products.
