在我国,癌症已成为死因中的第四位,有的省市上升到第1、2位。因此,人们都很关注癌症的预防。那末,是否可防呢?当我们思索这个问题时,应看到到下列四点事实:①在不同地区居住的人群间,肿瘤的发病率是不同的;②从一个地区来的移居者,和那些仍在原地的人是有差别的;③在同一人群中,肿瘤的发病率有着时间的变异;④许多特异的原因或预防因素已鉴别出来。因此,癌症不是不可预防的。但是,当探讨这些差别的来由,寻找与癌症有关的病因学因素时,科学家们看到人类环境中许多因素是肿瘤发生的潜在危害。这些致瘤因素存在于我们吸入的空气中、饮水中、工作和生活的地段、以及摄入的食物中。营养与肿瘤的联系由此产生,注意饮食就成为防癌的途径之一。本文仅就营养成份与肿瘤的关系,作一综述。人们摄取营养成分的水平,包括摄取量和由哪些食品供给这些营养成份,也就是量和质两个方面。它们与肿瘤发病率和死亡率的关系如何?让我们翻阅一下当今世界上的一些
