目的了解如东县饮食业餐具卫生状况,为餐饮卫生监督及卫生管理提供决策依据。方法采用大肠菌群快速检测纸片法对全县各餐饮业餐具消毒效果进行卫生监测检验,按中华人民共和国国家标准GB14934—94餐具判定标准评价。结果 2006~2008年共抽检各型餐饮单位1449户次,合格967户次,合格率66.74%;共检测餐具17722件,合格14035件,合格率79.19%;冬春季餐具监测合格率72.29%,夏秋季为61.8%;不同类别餐饮单位餐具合格率及不同种类餐具样品的监测合格率均存在一定的差异。结论如东县餐饮单位餐具卫生状况近年来呈好转趋势,但合格率仍处于较低水平,餐饮安全隐患依然存在。建议进一步加大餐饮业卫生执法力度,强化卫生宣传教育,加强业主的卫生意识和自身管理,以提高饮食业餐具的卫生质量,降低食源性疾病的发生,减少公共餐饮不安全隐患。
Objective To understand the health condition of catering tableware in Rudong County and to provide decision-making basis for food hygiene supervision and health management. Methods The method of rapid detection of coliform bacteria was used to monitor the disinfection effect of tableware in various catering industries in the county. According to the standard of GB14934-94 of People’s Republic of China, the standard was evaluated. Results From 2006 to 2008, a total of 1449 sampling units of various types were selected, with a passing rate of 967, with a passing rate of 66.74%. A total of 17722 pieces of tableware were checked and their qualifications were 14,035, with a pass rate of 79.19%. The monitoring rate of tableware in winter and spring was 72.29% 61.8% in autumn; catering units of different types of tableware pass rate and the different types of tableware monitoring pass rate there is a certain difference. Conclusion Rudong dining unit tableware health status has shown a turnaround trend in recent years, but the pass rate is still at a low level, catering security risks still exist. It is suggested to further intensify the health enforcement in the catering industry, strengthen publicity and education on health, strengthen owners’ health awareness and self-management so as to improve the hygiene quality of tableware in the catering industry, reduce the occurrence of food-borne diseases and reduce the hidden dangers of public catering.
