Conjugated linoleic acid (CLA) presents in some of the animal food of ruminant origin at a relatively low level due to the active ruminal biohydrogenation of polyunsaturated fatty acids.Thus,its accumulation could be enhanced by the prevention of biohydrogenation and the stabilization of fat substrates.In this study,the protection effects of various CLA-complexes with lecithin,arginine(Arg),and xylitol on the biohydrogenation by Butyrivibrio fibrisolvens A38 which is a major CLA producing tureen bacterium and the heat stabilities were also investigated
