雨生红球藻中虾青素亚麻酸单酯抗氧化活性的研究

  选取DPPH、ABTS+、·OH自由基清除能力,油脂抗氧化能力和铁离子还原能力为指标,研究雨生红球藻中虾青素亚麻酸单酯的抗氧化活性.结果 表明:虾青素亚麻酸单酯对DPPH、ABTS+、·OH自由基的清除能力均随浓度的增加而增强.其中对ABTS+和·OH自由基的EC50值分别为7.09±0.20 μg/mL和11.08±0.76 μg/mL;对油脂过氧化具有一定的抑制作用,5d后过氧化值为7.32±1.53 meq/kg;对铁离子具有一定的还原能力,其FRAP值为0.236±0.021 mmol/L.
