明代医学家张仲景说:“水为何物?命脉也!”人类禁食可维持生命7~9天甚至几周,禁水只能维持3~5天,可见水比食物对人体更为重要。人虽然离不开水,但现在的水却让人担忧。世界卫生组织调查表明,80%的疾病和50%的儿童死亡率都与饮用水水质不良有关。工业的日渐发达,导致水资源受到严重污染,水质发生重大改变。人们常用“50年代淘米水洗菜,60年代浇水灌溉,70年代水质破坏,80年代鱼虾绝代,90年代致病致癌”的顺口溜来描绘水质污染的严重性。
