本文对河南省新蔡县轻、中、重3个不同程度的受灾村灾后因食用霉变小麦而引起的食源性疾病进行了研究。共调查790例,发病575例,发病率72.78%;其中个案调查313例,发病296例,发病率为94.57%。发病率个案调查与抽样调查P>0.05无显著性差异。随机采取小麦样品24份,霉菌总数在102~108cfu/g之间,检出霉菌8个属,22种,优势霉菌主要为根霉、毛霉和曲霉,链刀菌属仅为2.06%,染霉为90.0%,占58.3%,10份小麦中DON含量大于1mg/kg,占41.7%,最高含量为3.5mg/kg,21份小麦中T-2毒素检出18份,大于100μg/kg,占85.7%,最高含量为1268.9μg/kg,其临床中毒症状有腹痛、腹泻、头晕、头痛、恶心、视力模糊、耳鸣、烦躁和呕吐等症状,症状频率分别为86.82%、70.95%、67.91%、57.09%,52.36%、51.69%、41.22%、23.31%、22.64%。
In this paper, three kinds of light, moderate and heavy affected villages in Xin Cai County of Henan Province were studied for their food-borne diseases caused by the consumption of moldy wheat.
