由中国食品科学技术学会主办的“首届亚洲面食产业发展研讨会”于1996年10月22~26日在北京隆重召开。来自亚洲8个主要国家和地区面食产业的400多名代表汇聚一堂,共同研究和探讨了亚洲面食制品主要是方便面的历史、现状和发展趋势,并展示了各国在发展面食制品方面的新产品、新技术和新成果,相互交流了各国在面食工业新工艺、新材料和新装备开发方面的经验。同时,分析预测了亚洲面食产业的市场趋向,指明了亚洲面食产业的发展方向。会上,代表们就中国方便面发展提出了以下建议:1.尽快制定相关质量的国标或行标。如方便面生产的品质控制应从原料开始,日本的方便面生产已全部采用专用粉;而我国迄今还没有方便面专用小麦粉的质量标准,造成国产方便面质量不稳定。2.采用新技术、新工艺提高产品质量,丰富方便面品种。目前,国内90%是油炸方便面,平均含油率23%左右,不仅增加成本、易氧化,而且对人体健康不利;发达国家一般将含油率控制在18%左右。
The “First Asian Pasta Industry Development Seminar” sponsored by the China Food Science and Technology Society was held in Beijing from October 22 to October 26, 1996. More than 400 representatives from the pasta industry of 8 major countries and regions in Asia gathered together to study and explore the history, status quo and development trend of Asian pasta products, mainly including instant noodles, and showcased new products for developing pasta products in various countries. New technologies and new achievements have exchanged experiences of various countries in the development of new processes, new materials and new equipment in the pasta industry. At the same time, it analyzes and predicts the market trends of the Asian pasta industry and points out the development direction of the Asian pasta industry. At the meeting, the delegates made the following suggestions on the development of instant noodles in China: 1. As soon as possible, formulate relevant national quality standards or standards. For example, the quality control of instant noodle production starts with raw materials. Japan’s instant noodle production has all been made of special powder; while China has so far no quality standard for instant noodles special wheat flour, resulting in unstable domestic instant noodles. 2. Adopt new technologies and new processes to improve product quality and enrich instant noodles. At present, 90% of domestic fried instant noodles, the average oil content of about 23%, not only increase the cost, easy oxidation, but also adverse to human health; developed countries generally control the oil content of about 18%.
