随着社会经济的发展,人们生活水平的不断提高,人们对烹饪技法提出了更高的要求,因此,对刀工技术人员也提出了更高的要求。但目前传统的刀工教学模式,存在诸多弊端,如培养目标与市场对刀工技术人才要求脱节;传统的教学模式重操作轻理论,课堂教学不规范,很难调动学生学习积极性等。本文通过文献调研、教学考察、调查问卷等方法,对刀工教学现状以及教学存在的问题进行剖析,并结合餐饮企业以及学校实地考察与探索,提出了对刀工教育理论与实践相结合、多媒体教学模式、双语教学模式等改革措施,通过将这些措施运用于实际教学中,可提高学生的学习兴趣、学习能力以及思想素质,从而达到市场对刀工人才的要求。
With the development of society and economy, people’s living standards are constantly improving, and people have put forward higher requirements on cooking techniques. Therefore, higher requirements are also placed on knife technicians. However, the traditional knives teaching mode has many drawbacks, such as training objectives and market demand for skilled knives workers out of touch; the traditional teaching mode re-operation light theory, classroom teaching is not standardized, it is difficult to mobilize the enthusiasm of students and so on. This article analyzes the current situation of knives workers teaching and the existing problems through literature research, teaching investigation, questionnaire and other methods. Combining with the catering enterprises and the school field investigation and exploration, this paper puts forward the combination of the theory and practice of knives education, the teaching mode of multimedia , Bilingual teaching mode and other reform measures. By applying these measures in practical teaching, students’ interest in learning, learning ability and ideological quality can be improved so as to meet the market demand for knife workers.
