以狮子头大白菜、菊花和金银花为主要原料,以感官评分为评价指标,采用单因素试验和正交试验研究探索白菜益生汤的最佳配方。最佳配方为:白菜汁与中药汤配比3∶1、柠檬酸用量0.1%、白砂糖用量7.0%、CMC-Na 0.01%、海藻酸钠0.02%。在此配方条件下制备的白菜益生汤总固形物含量为11.5%、有效酸度p H4.26、总黄酮含量7.22mg/g、菌落总数70CFU/m L,不分层且状态均匀。
Taking lion head Chinese cabbage, chrysanthemum and honeysuckle as the main raw materials and sensory evaluation as the evaluation index, the best formula of Chinese cabbage Yisheng Decoction was explored by single factor experiment and orthogonal experiment. The best formula is: cabbage juice and Chinese medicine soup ratio of 3: 1, 0.1% citric acid, sugar content of 7.0%, CMC-Na 0.01%, sodium alginate 0.02%. The total solid content of Chinese cabbage prepared under this recipe was 11.5%, the effective acidity p H4.26, the total flavonoid content 7.22mg / g, the total number of colonies 70CFU / m L, without delamination and uniform state.
