锌,是人体所必需的微量元素之一。人体内锌的含量是有一定比例的,少了不成,多了也不可以。一般而言,成人体内含锌量约为2.3克。老年人缺锌会使身体功能出现诸多障碍,表现最为明显的就是常常感到味觉迟钝,吃东西不香,究其原因除了舌头上味蕾数目减少和牙齿缺损影响咀嚼外,缺乏锌也是重要原因。有人对33位老年人和31名青年人进行比较,发现老年人对苦、辣、酸、甜、咸的感觉远比青年人低下。老年人常常对咸食感到不咸,对甜食感到不甜等。而且老年人体内缺锌愈多,味觉就愈差,这是因为锌有参与味觉素合成,增强味蕾机能和营养味觉以及促进食欲的作用。
