以进口甜樱桃为试材,研究了电子加速器和钴源辐照处理对果实货架品质的影响,分析了不同剂量处理条件下甜樱桃的呼吸强度、维生素C、还原糖、可滴定酸、可溶性蛋白质、总氨基酸、总可溶性固形物、果实硬度、失重率、腐烂率的变化情况。结果表明:辐照处理未导致甜樱桃果实总可溶性固形物、还原糖、可滴定酸含量的显著损失;电子直线加速器辐照导致甜樱桃果实维生素C含量和果实硬度降低、腐烂率增加;钴源辐照的效果优于电子直线加速器,250 Gy处理的甜樱桃在货架期25±3℃存放5 d后,维生素C含量、可滴定酸、果实硬度均高于未辐照处理,腐烂率比未辐照处理低8.34%。
The effects of electron accelerator and cobalt source irradiation on the quality of fruit shelves were investigated with imported sweet cherry as test material. The effects of different doses on the respiration intensity, vitamin C, reducing sugar, titratable acid, soluble protein , Total amino acids, total soluble solids, fruit firmness, weight loss rate and decay rate. The results showed that irradiation treatment did not lead to significant loss of total soluble solids, reducing sugars and titratable acid in sweet cherry fruits. Electron linac irradiation led to the decrease of vitamin C content and fruit firmness, Irradiation was superior to that of electron linac. After treated with 250 Gy for 25 days at 25 ± 3 ℃, vitamin C content, titratable acidity and fruit firmness were higher than those without irradiation, The irradiation treatment is 8.34% lower.
