在用β-胡萝卜素漂白法初步探查到山茱萸(Cornus officinalis Sieb.etZucc.)果核的甲醇提取物具有抗氧活性后,又用烘箱法考察了其甲醇提取物和水提取物在市售豆油和猪油中的抗氧作用。试验结果表明两种提取物均呈现明显抗氧作用。它们在豆油中的保护因数PF_(100)分别为1.53和1.62;在猪油中的保护因数PF_(20)分别为2.50和6.50。从核的甲醇提取物中分离和鉴定了两种活性成分——没食子酸及其甲酯。烘箱试验证明,二者在市售豆油和猪油中的抗氧作用与合成抗氧剂BHA、BHT可以媲美。并研究了它们的抗氧作用与添加量的关系。
After the initial detection of the beta-carotene bleaching method for the methanol extract of the Cornus officinalis Sieb.et Zucc. kernel had antioxidant activity, the methanol extract and water extract of the Cornus officinalis Sieb.et Zucc. And antioxidant effects in lard. The test results showed that both extracts showed significant antioxidant effects. Their protection factors in soybean oil PF_ (100) were 1.53 and 1.62, respectively; in the lard, the protection factor PF_ (20) was 2.50 and 6.50, respectively. Two active ingredients, gallic acid and its methyl ester, were isolated and identified from the nuclear methanol extract. The oven test proved that the antioxidant effects of the two in soybean oil and lard on the market were comparable to those of synthetic antioxidants BHA and BHT. The relationship between their antioxidant effects and the amount added was studied.
