通过对6573名大豆行动计划试点学校学生服用三个学期豆奶后的跟踪调查表明,服用豆奶组学生的血红蛋白含量男生上升了051g/dl,女生上升了032g/dl,分别比未服用豆奶组多上升017g/dl与010g/dl,并且服用豆奶组同未服用豆奶组之间血红蛋白变化的差异具有统计学意义。服用豆奶对服用豆奶组的贫血纠正率为342%,比未服用豆奶组的变化高83个百分点,前者同后者相比具有统计学意义。
