食用菌多数系腐生性真菌,通过自身分泌各种酶,将有机物中高分子的纤维素和木质素水解为可溶性的低分子单糖,加以吸收利用,供给菌丝和子实体生长发育。因此,纤维素和木质素这类有机物被认为是食用菌营养代谢的主要碳源。但据报道,在食用菌生长的不同阶段对这类物质的利用是不一样的。为探讨不同生长阶段对营养物质的利用特性,我们对7种食用菌菌丝生长期的营养代谢进行了分析,结果如下。
Most edible fungi saprophytic fungi, through their own secretion of various enzymes, organic polymers in the cellulose and lignin hydrolysis of soluble low molecular sugar, to be absorbed, the supply of mycelium and fruiting body growth and development. Therefore, organic substances such as cellulose and lignin are considered as the main carbon source for nutrient metabolism of edible mushrooms. However, it is reported that the utilization of these substances is not the same at different stages of the growth of edible mushrooms. In order to explore the utilization characteristics of nutrients in different growth stages, we analyzed the nutritional metabolism of the mycelia of seven edible fungi at the growth stage, the results are as follows.
