广式腊味在广州已有近百年历史了。“秋风起,食腊味”,此话是广州人吃的“谚语”。春节期间,腊味更是广州家家户户必储的食物。如今,连外省人也喜欢上它了。广州最早的腊味应是“沧洲栈”(现为“沧洲烧腊店”),创立于1903年。其后又有“八百载”和“皇上皇”。经过了广州人几十年的努力,众多具有广州地方特色的腊味品种,汇聚成为“广式腊味”。现在“广式化”食品已经进北京、赴新疆、入西安……在外国也可见它的芳踪。
