蔬菜怍为维生素、铁、钙等矿物质和食物纤维素的重要供给来源,同时作为碱性食品,为饮食生活所不可缺少的.但是,根据厚生省所作的国民营养调查结果,1983年国民每人每天平均蔬菜的摄取量,包括薯类在内为322克.从营养角度看,必要的摄取量标准为400克,相当于80%左右.特别是蔬菜根据其营养,可分为不同的类型.淡色蔬菜(卷心菜、萝卜、洋葱等.)的需要量标准为200克,摄取量为198克,基本上满足了对它的需求水平.富含胡萝卜素(维生素A)
