青稞是大麦的一种,又叫裸大麦、元麦、淮麦或米大麦,是我国西南高原地区普遍栽培的一种作物,是我国西南高原地区对裸大麦的一种特有称呼,其在分类学上属于禾本科、大麦属、普通大麦种、多棱裸粒大麦变种。我国在新石器时代已在青藏高原东部和黄河上游一带开始栽培大麦,其中主要就是青稞和六棱大麦:
