研究酶电极生物传感器法测定冷却肉中的糖原含量。利用淀粉葡萄糖苷酶将糖原分解为葡萄糖,再用葡萄糖氧化酶电极生物传感器测定葡萄糖含量。结果表明:生物传感器在葡萄糖浓度0.5~20mg/mL范围内线性关系良好(R=0.9998);加样回收率为98.8%~101.2%,抗干扰性强;对肌糖原的检测与蒽酮比色法、酶解分析法相比较,差异不显著(P>0.05);且仪器重现性和稳定性较好。葡萄糖生物传感器用于肌糖原含量测定具有检测精度高、速度快、稳定性好、使用成本低等优势,有望成为检测冷却肉中肌糖原含量的新方法、新手段。
Determination of Glycogen in Chilled Meat by Enzyme Electrode Biosensor Method. Glucoamylase was used to decompose glycogen into glucose, then the glucose oxidase electrode biosensor was used to determine the glucose content. The results showed that the biosensor had a good linearity (R = 0.9998) in the range of 0.5-20 mg / mL glucose, the recovery was 98.8% -101.2%, and the anti-interference ability was good. Color method, enzymatic hydrolysis analysis, the difference was not significant (P> 0.05); and instrument reproducibility and stability is better. Glucose biosensor for muscle glycogen content determination with high precision, fast, good stability, low cost and other advantages, is expected to become a new method of detecting muscle glycogen content in the cold, a new means.
