豆制代乳品5140配方中含5％蛋黄粉。这一制品对促进动物和婴儿生长的效用,经试验不低于人奶和牛奶粉。由于蛋黄粉原料的来源较为困难,同时欲探索蛋黄粉所起的作用,因而就来源易,已知营养成分相当的代用品,拟出了三个新的豆制代乳品配方5411,5720,5721。都是在代乳糕5410的基础上,将其中的蛋黄粉改为来源较易的全蛋粉或全脂牛奶粉。配方5411有金蛋粉5％,5720有全脂牛奶粉5％,5721有全脂牛奶粉10％。其原料和用量基本上都与5410配方相同。 新的配方以5410配方为对照,用大白鼠生长试验评价其制品的营养效用。结果表明:5411全蛋粉制品促进生长的效果与5410配方的相同;而5720与5721牛奶粉制品的效果显然较低,但比无蛋或奶的要好得多,就营养效价而论,第一为蛋黄粉制品(5410),第二为全蛋份制品(5411),第三为10％牛奶粉制品(5721),第四为5％牛奶粉制品(5720)。本文作者认为三个新配方都可试行推广。 在5410配方中的蛋黄粉对促进生长有特殊的良好作用。
