In this paper, UV spectrophotometric method for the determination of flour and flour products benzoyl peroxide method. The conditions of sample processing, reduction, distillation and absorption spectra were discussed. The recovery rate: 92-110%, CV6.3%. Detection (?): 0.02g / kg, detection range: 0-1.3g / kg. Meet the needs of the normal supervision and monitoring.
