This article reports on the blocking effect of Actinidia chinensis on the synthesis of N-2-nitroproline (NPRO) in vivo. The subjects were 15 male Wistar rats and 10 male healthy volunteers. Staged observation with their own control. Experiments in rats showed that Kiwifruit juice could block the synthesis of NPRO in vivo (the blocking rate was 59.6%), and the effect was better than the same concentration of vitamin C solution. The volunteers fed 150g of Chinese kiwifruit with 75mg vitamin C could completely block 300mgNaNO_3 And NPRO synthesis in vivo after 500 mg proline, whereas 75 mg vitamin C is only partially blocked.
