襄汾县汾阳岭村有5000多棵柿子树,每年盛产柿子30万公斤甚至50万公斤。除加工柿饼外,约有15万公斤柿子需要贮存。这一带的地下水群众根据品尝感觉称作“甜水”和“苦水”。人们利用“苦水”浸泡贮存柿子已有多年历史。但本村的水是“甜水”,要浸泡贮存柿子需到几十里之外拉运“苦水”。村民迫切要求解决柿子贮存问题。一、柿子浸泡过程秋分前后,肺子成熟。村民选择无病虫、无破伤的柿子浸泡于“苦水”中,七八天后,柿子自然脱涩。大雪过后,温度下降,天气变冷,浸泡柿子的器皿上部逐渐结冰。冰层达2厘米厚时,人们怕器皿冻破,用麦草、破棉絮将器皿围住,这样一直到第二年柿子出售完。
