目的了解三明市城区传统早餐食品中油条、馒头、油饼污染状况。方法在市区内各早餐点随机采样,用湿法处理样品,铬天青S分光光度法测定其含量。结果 92份样品中,铝含量平均值142.3mg/kg,铝含量总超标率达60.9%;其中油饼中铝含量平均值85.1mg/kg,超标率31.2%(5/16),;馒头中铝含量平均值93.7mg/kg,超标率36.8%(7/19);油条中铝含量平均值174.5mg/kg,超标率77.2%(44/57)。前后2次调查检测油条摊点,铝含量相差较大。结论三明市早餐食品中油条、馒头和油饼铝污染严重,长期食用不利于健康。有关部门需重视,加以管理和控制。
Objective To understand the pollution of fried dough sticks, steamed bread and cake in the traditional breakfast food in Sanming City. Methods Samples were taken randomly at breakfast spots in the urban area. The samples were treated with wet method and the content was determined by chromazurol S spectrophotometry. Results In 92 samples, the average content of aluminum was 142.3 mg / kg and the total content of aluminum exceeded 60.9%. The average content of aluminum in oil cake was 85.1 mg / kg, exceeding the standard of 31.2% (5/16) Average content of 93.7mg / kg, excessive rate of 36.8% (7/19); fritters in the average content of 174.5mg / kg aluminum, excessive rate of 77.2% (44/57). Before and after the two surveys detected fried stick stalls, large differences in aluminum content. Conclusion Sanming City, fried foods, fried bread and cake aluminum pollution, long-term consumption is not conducive to health. Departments need to pay attention to management and control.
