Variation of pH value and nitrogen content of Pleurotus eryngii substrate were recorded during period of mycelium incubation and fruit body development.The pH value of substrate decreased in all of the period, 8.2 before sterilization, 7.1 after sterilization, around 6.5 after colonized with mycelia, lower than 6.0 when primordium formation decrease a little after fruit body harvest.The nitrogen content varied from 1.44% to 1.67% around the cultivation cycle.Both pH value and nitrogen content showed a little difference in upper, middle and bottom parts in same bottle culture.
