Anthocyanins (Acys) are naturally occurring compounds that impart color to fruit,vegetables,and plants.The Acys were extracted from red raspberry at previous optimized parameters by conventional solvent extraction (CSE),microwave-assisted extraction (MAE) and ultrasound-assisted extraction (UAE),respectively.Result indicates that MAE and UAE can save extraction time,and MAE is the best method due to the largest extraction yield (38.73 mg of Acys from 100g of fresh fruits,TAcy,expressed as cyanidin-3-glucoside); CSE is time consuming and the heating extraction.In addition,in comparison with CSE,MAE and UAE are more efficient and rapid to extract Acys from red raspberry,due to the strong disruption of fruit tissue structure,which had been observed with the scanning electron microscope (SEM).However,the HPLC profiles of Acys compositions in extracts by the three methods were similar.
