Cold-adapted fungi have special adaptations to their enzymes, membranes and other cellular components, enabling them to grow well at lower temperatures compared to mesophilic fungi.During the past few decades, there has been a large increase in research on cold-adapted fungi, driven by the realisation that cold-adapted fungi and their enzymes have a great potential for exploitation in biotechnology.
