The pulse rise time is an important waveform parameter in pulsed electric fields processing.The influence of different pulse rise time (2.5 μs and 200 ns, respectively) of high-voltage square wave on inactivation of Staphylococcus Aureus was studied.Apple juice with the conductivity of 2.0 mS/cm was processed for an array of time (37 μs, 46 μs, 56μs, 65 μs, 74 μs) at the electric strength of 30 kV/cm and 35kV/cm.
