Rice is recognized as the most important crop and has been self-sufficient in Japan.The issue currently of greatest importance to the rice agriculture is consumption expansion,the processing and utilization of rice flour is effective,therefore.The variation in the composition and amounts of the flavor volatiles which are principal sensory qualities as same as texture during heating process rice flour were analyzed by using a modified headspace SPME method in conjunction with GC-MS.The three Japanese rice varieties of Syunyou,LGC-soft and Akitakomachi,harvested in Akita respectively,Japan,were used as samples.
