  Cereal foods constitute a major part of the daily diet.Cereal grains are refined to white flour from which peripheral tissues are removed,but these tissues contain most of the micronutrients,fiber,and phytochemicals that could contribute greatly to the nutritional quality of human food.Reduction in the size of cereal grains is frequently necessary in many food processes,the reduction mechanism consisting of deforming the food pieces until they break or tear.
