Food safety is very important for human health.Usually, food poisoning cases were through pathogenic microorganism and produced toxins in food.Therefore, to develop a screening method for determination the trace toxins in food is very important in food safety.The purpose of this study is to develop the rapid screening technique for monitoring the pathogenic microorganism and product toxins in food.QuEChERS (quick, easy, cheap, effective, rugged, safe) was used to extract toxins.The eight mycotoxins were separated on a Waters XTerraTM MS C 18 column in 25 minutes.The optimum parameters of MS/MS for eight mycotoxins and conditions of QuEChERS preparation were also discussed.
