目的了解桂林市食品中食源性致病菌的污染情况,为制定食源性疾病预防和控制措施提供依据方法2008~2011年按食源性疾病监测手册采集桂林市市售7类食品进行食源性致病菌检测,运用SPSS 18.0进行描述性流行病学统计分析。结果共采集食品331份,检出食源性致病菌58份,检出率为17.52%。蔬菜及巴氏杀菌奶样本中未检出。速冻米面食品检出率最高,为36.00%,检出均为金黄色葡萄球菌,其中生米面食品检出率高于熟米面食品。动物性水产品检出率为33.33%,副溶血弧菌占77.78%。生畜肉与生禽肉检出率分别为9.62%和24.32%,差异无统计学意义,以沙门氏菌为主。即食食品检出率为14.17%,由高到低依次为冰淇淋(50%)、蛋糕(40%)、果汁(30%)和非发酵豆制品(20%),检出均为金黄色葡萄球菌;熟肉制品、中式凉拌菜、沙拉均未检出。食品中未检出大肠杆菌O157和空肠弯曲菌。结论食品中存在食源性致病菌污染,应加大监测力度,加强卫生监管,减少食源性疾病的发生。
Objective To understand the contamination of food-borne pathogens in foodstuffs in Guilin and provide evidence for the development of foodborne disease prevention and control measures. Foodstuffs disease surveillance manuals were used to collect foodstuffs of 7 types of foodstuffs marketed in Guilin from 2008 to 2011 Pathogenic bacteria detection, the use of SPSS 18.0 descriptive epidemiological analysis. Results A total of 331 food samples were collected, and 58 foodborne pathogens were detected, the detection rate was 17.52%. Vegetables and pasteurized milk samples were not detected. Frozen rice noodles food detection rate was the highest, 36.00%, were detected Staphylococcus aureus, including raw rice noodles food detection rate is higher than cooked rice noodles. The detection rate of animal aquatic products was 33.33% and that of Vibrio parahaemolyticus was 77.78%. The detection rates of live meat and raw poultry meat were 9.62% and 24.32%, respectively, with no significant difference, mainly Salmonella. The detection rate of ready-to-eat foods was 14.17%, followed by ice cream (50%), cake (40%), fruit juice (30%) and non-fermented soybean products ; Cooked meat products, Chinese salad, salad were not detected. Escherichia coli O157 and Campylobacter jejuni were not detected in the food. Conclusion Food-borne pathogens in food contamination should be strengthened to strengthen the monitoring of health and reduce the occurrence of foodborne diseases.
