目的 :了解驻城区及非城区部队士兵的膳食营养状况 ,提出改善膳食营养建议 ,保障官兵身体健康。方法 :采用称量法连续 7d对驻某市内某训练队及驻市外半山区的一个步兵连队进行膳食调查。结果 :两单位的膳食结构均以谷物和蔬莱为主 ,豆类及动物性食品比例小 ,且动物性食品种类单一 ,膳食结构呈不平衡状态 ;两单位比较 ,城区好于山区连队。城区部队热能充足 ,山区部队热能供给低于军标。两单位的蛋白质摄入均不足 ;维生素除VC外 ,其余均未达标 ,尤其是VB2 和VA明显缺乏 ;无机盐除元素铁外 ,钙、锌、硒供给不足。蛋白质主要来源于植物性食物 ,动物性食物蛋白质来源的比例明显低于军标。结论 :两个连队的膳食营养供给状况 ,城区优于非城区连队 ,但蛋白质及多种维生素和无机盐均供给不足。应提高动物类食品的供应 ,增加大豆及其制品的供给量。
OBJECTIVE: To understand the nutritional status of soldiers in both urban and non-urban areas and to propose dietary nutrition improvement suggestions to ensure the health of officers and men. Methods: Weighing method for 7d consecutive days in a city in a training team and an infantry company in Mid-Levels outside the city for a meal investigation. Results: The diets of both units were dominated by cereals and vegetables, and the proportion of pulses and animal foods was small. There was a single species of animal food and the dietary structure was unbalanced. Compared with the two units, the urban area was better than the mountain company. The sufficient amount of thermal energy in the urban units and the supply of thermal energy by the mountain units are lower than the military standard. The two units of protein intake are not enough; vitamin VC, the other did not meet the standard, especially VB2 and VA was significantly lacking; inorganic salts in addition to iron, calcium, zinc, selenium supply. The main source of protein from plant foods, the proportion of animal food protein sources was significantly lower than the military standard. Conclusion: The dietary supply of the two companies is better than that of the non-urban companies in the urban area, but the protein and vitamins and inorganic salts are under-supplied. The supply of animal foods should be increased to increase the supply of soybeans and their products.
