甘薯,又名红薯、地瓜、蕃薯等。其保存时间过长,储藏不善可感染黑斑病(系真菌中的囊子菌寄生于甘薯),引起薯块失水状干霉。病变部位呈褐色或几乎无颜色改变的圆形硬斑,并产生一种有毒味苦的物质—4-薯醇[1],4-薯醇耐高温、水煮火烤都依然不变其苦味和毒性,因此,无论食用者生吃或熟食病薯块均可引起中毒。我院于2002年3月救活1例甘薯黑斑病中毒,现具体报告如下。
