玉米的蛋白质含量比小麦低,又缺乏色氨酸,其含量不能满足人体合成尼克酸的需要。玉米中尼克酸含量也少,而且绝大部分为结合型,不能为人体所利用。因此,长期偏食玉米,缺乏肉食、豆类、蔬菜等副食品情况下,易发生癞皮病。为了纠正玉米中色氨酸含量低的缺陷,1964年Mertzet等发表了他们关于Opaque-2玉米的结果,引起了许多国家的广泛重视,纷纷探索对这种发现的利用。用其改良玉米的蛋白质品质,并用来治疗儿童蛋白质营养不良症获得良好效果。北京农业大
