新椒21号是采用系谱法选育的加工专用型辣椒品种。其生长势强,叶色深绿,株高80～86cm,始花节位第11～12节,门椒至地面的高度为23～25cm。果长13～14cm,宽2.2～2.75cm,长羊角形,青熟果深绿色,老熟果紫红色,色泽光亮,表皮光滑,干椒单果质量2.7～3.0g,色价为14.1,色调1.01,辣度0.1189%,符合加工的需要。适合于新疆地膜覆盖栽培。
