目的:研究金荞麦中原花青素B2和表儿茶素在人工胃肠液中的含量变化,为金荞麦的体内物质基础研究提供依据。方法:采用HPLC测定金荞麦提取液中原花青素B2和表儿茶素在人工胃液和人工肠液中的含量变化。结果:原花青素B2和表儿茶素在酸性的人工胃液中含量随时间延长明显增加,胃蛋白酶对原花青素B2和表儿茶素的含量影响不大。原花青素B2和表儿茶素在人工肠液NE(无胰蛋白酶)中含量增加,胰酶能够降低原花青素B2和表儿茶素的含量,对原花青素B2含量影响尤为明显。结论:酸性的人工胃液是引起金荞麦提取液中原花青素B2和表儿茶素含量上升的主要原因,胰酶与原花青素B2和表儿茶素发生结合是降低原花青素B2和表儿茶素的含量的主要原因。
Objective: To study the changes of contents of proanthocyanidins B2 and epicatechin in Artificial Gastrointestinal Solution of Fagopyrum Buckwheat, and provide the basis for the research on the material basis of Fagopyrum Buckwheat. Methods: The contents of procyanidin B2 and epicatechin in artificial gastric juice and artificial intestinal juice were determined by HPLC. Results: The content of proanthocyanidin B2 and epicatechin in acid artificial gastric juice obviously increased with time, and pepsin had little effect on the content of proanthocyanidin B2 and epicatechin. Proanthocyanidins B2 and epicatechin in artificial intestinal fluid NE (no trypsin) content increased, trypsin can reduce the content of proanthocyanidins B2 and epicatechin, the proanthocyanidins B2 content is particularly evident. CONCLUSIONS: Acidic artificial gastric juice is the main reason for the increase of proanthocyanidins B2 and epicatechin in the buckwheat extract. The combination of trypsin, proanthocyanidin B2 and epicatechin can reduce the content of procyanidin B2 and epicatechin main reason.
