目的了解佛山市食品中化学污染物的污染状况,以便有针对性地加强食品卫生监督监测管理,为建立食品污染物监测管理体系提供科学依据。方法对市场随机抽样的食品中有机磷农药、氨基甲酸酯类农药、拟除虫菊酯类农药残留、三氯杀螨醇、铅、镉、汞、铝、甜蜜素、日落黄、柠檬黄、苋菜红、胭脂红等化学污染物按有关国家食品卫生检验方法进行测定并分析。结果 2008~2010年3年度共检测样品588份,不合格94份,总超标率为16.0%。其中92份样品检测农药残留,超标率为10.9%;316份样品检测铅、镉和汞,超标率依次为6.5%、7.3%、3.8%;64份样品检测铝,超标率为:29.7%;96份样品检测甜蜜素,超标率为10.4%;20份样品检测色素,未有样品超标。结论佛山市大部分食品中的化学污染物含量符合国家卫生标准,但部分食品的卫生质量不容乐观,应加强对农药残留、铅、镉、铝、甜蜜素等食品化学污染物的卫生管理和监测,从源头上杜绝化学性污染,确保佛山市的食品卫生安全。
Objective To understand the pollution status of chemical pollutants in food in Foshan so as to strengthen the monitoring and management of food hygiene supervision in a targeted manner and provide a scientific basis for the establishment of a monitoring and management system for food contaminants. Methods The samples of organophosphorus pesticides, carbamate pesticides, pyrethroid pesticide residues, dicofol, lead, cadmium, mercury, aluminum, cyclamate, sunset yellow, lemon yellow, amaranth, carmine and so on Chemical pollutants according to the relevant national food hygiene testing methods were measured and analyzed. Results A total of 588 samples were detected during the three years from 2008 to 2010, 94 were unqualified. The total over-standard rate was 16.0%. Among them, 92 samples were used to detect the pesticide residues, the exceeding standard rate was 10.9%; 316 samples were tested for lead, cadmium and mercury, exceeding the standard rate of 6.5%, 7.3% and 3.8% respectively; 64 samples were aluminum, exceeding the standard rate of 29.7% 96 samples were tested for cyclamate, exceeding the standard rate of 10.4%; 20 samples for the detection of pigment, no sample exceeded. Conclusion The content of chemical pollutants in most foodstuffs in Foshan meets the national health standards, but the hygienic quality of some foods is not optimistic. Health management and monitoring of pesticide residues, food chemical pollutants such as lead, cadmium, aluminum and cyclamate should be strengthened , From the source to eliminate chemical pollution and ensure food hygiene and safety of Foshan City.
