目的全面了解大理市餐食具卫生现状,评价餐食具消毒质量。方法对大理市2005-2009年监测的31 346件餐食具监测结果根据国家标准进行评价。结果 5年平均总合格率为73.03%,全市合格率逐年下降,其中以临时摊点合格率最低。结论提高小摊点餐食具消毒合格率是工作的难点,要加大行政执法力度,从整体上改善餐食具卫生现状,投入必要的资金改善工作环境和设施,消除食物中毒和食源性疾病隐患。
Objective To fully understand the sanitary status of food utensils in Dali City and evaluate the quality of food utensils disinfection. Methods The monitoring results of 31 346 food utensils monitored in Dali during 2005-2009 were evaluated according to national standards. The results of the 5-year average total pass rate was 73.03%, the city’s pass rate decreased year by year, of which the temporary pass the lowest pass rate. Conclusion Increasing the passing rate of tableware disinfection is a difficult task for work. We should step up efforts in administrative law enforcement, improve the sanitary status of tableware as a whole, and invest the necessary funds to improve the working environment and facilities so as to eliminate the hidden dangers of food poisoning and foodborne diseases .
