目的分析大连市食品中致病菌污染状况及食源性疾病的发生。方法 2012年选取大连市有代表性的农贸市场、食品超市、宾馆酒店及个体摊贩随机采集7个种类食品,按照《全国食源性致病菌监测工作手册》的标准操作程序对样品进行沙门氏菌、志贺氏菌、单核细胞増生李斯特菌、大肠埃希氏O157:H7、金黄色葡萄球菌、副溶血弧菌、创伤弧菌、蜡样芽孢杆菌检测。结果采集的7类食品共212份样品,样品中检出5种致病菌共18株,总检出率为8.49%。其中金黄色葡萄球菌10株,副溶血弧菌4株,蜡样芽孢杆菌2株,单核细胞増生李斯特菌1株,沙门氏菌1株。结论应采取相应的预防和控制措施,加强对各类食品的监督检测,减少由此引起的食源性疾病的发生。
Objective To analyze the contamination of pathogenic bacteria in food and the occurrence of foodborne diseases in Dalian. Methods In 2012, selected representative farmer’s markets in Dalian, foodstuffs supermarkets, hotels and individual vendors randomly collected seven kinds of foodstuffs. According to the standard operating procedure of “National Foodborne Pathogenic Bacteria Monitoring Manual”, the samples were tested for Salmonella, Shigella, Listeria monocytogenes, Escherichia coli O157: H7, Staphylococcus aureus, Vibrio parahaemolyticus, Vibrio vulnificus, Bacillus cereus. Results A total of 212 samples of 7 kinds of food were collected. Among them, 18 kinds of 5 kinds of pathogens were detected, the total detection rate was 8.49%. Including Staphylococcus aureus 10 strains, 4 strains of Vibrio parahaemolyticus, Bacillus cereus 2 strains, Listeria monocytogenes strain 1, Salmonella 1 strain. Conclusion The corresponding preventive and control measures should be taken to strengthen the supervision and testing of all kinds of food and reduce the incidence of food-borne diseases caused thereby.
