为了解食品中霉菌的污染情况,1997年4月~10月份对梧州市399份食品进行霉菌计数的调查.现将结果总结分析如下:1 材料与方法1.1 样品来源本站食品卫生科对梧州市的各个食品厂和销售点抽样及送样食品.1.2 检验方法按GB4789.15—94进行检验.1.3 评价标准按GB7100—86、GB7101—94、GB14884—94进行评价.2 结果所检399份样品中超过国家标准(≤50个/g)的80份;超标率为20.05%.各类食品超标情况不同,最少55个/g,最多1950个/g,平均450个/g,超标率低的有12 .5%,高的达54.76%.
