目的了解甘肃省地方特色米面食品食源性致病菌污染状况,为预防细菌性食物中毒的发生提供依据。方法依据国家标准《食品卫生微生物学检验》方法,对637份甘肃省地方特色米面食品进行6种食源性致病菌的分离鉴定。结果 637份特色米面食品样品检出152株致病菌,总检出率为23.86%;其中蜡样芽孢杆检出率为13.03%、金黄色葡萄球菌检出率为8.01%,单核细胞增生李斯特菌检出率为1.73%,沙门氏菌检出率为0.94%,志贺氏菌检出率为0.16%;肠出血性大肠杆菌O157∶H7未检出。结论甘肃省地方特色米面食品存在食源性致病菌污染,有引发食物中毒的潜在风险。
Objective To understand the contamination of food-borne pathogenic bacteria in local specialty rice noodles in Gansu Province, and to provide basis for prevention of bacterial food poisoning. Methods According to the national standard “Microbiological Inspection of Food Hygiene”, 637 foodstuffs of Gamsu Province were separated and identified from 6 foodborne pathogens. Results A total of 152 strains of pathogenic bacteria were detected in 637 samples of rice products with a total detection rate of 23.86%. The detection rate of pyrethrin was 13.03%, the detection rate of Staphylococcus aureus was 8.01%, monocyte proliferation Listeria monocytogenes detection rate was 1.73%, Salmonella detection rate was 0.94%, Shigella detection rate was 0.16%; enterohemorrhagic Escherichia coli O157: H7 was not detected. Conclusion There is food-borne pathogens contamination in local specialty rice noodles in Gansu Province, which has the potential risk of causing food poisoning.
