目的掌握海安县学校食堂餐饮具消毒工作动态,了解全县学校食堂餐饮具消毒合格情况,为制定学校食品安全卫生监督工作重点提供依据。方法搜集并整理2009—2012年度海安县学校食堂餐饮具监督监测抽检相关资料,进行统计学分析。结果 2009—2012年度该县共抽检学校食堂餐饮具684份,合格628份,平均合格率为91.81%;其中2009年最低,为86.39%;2012年最高,为97.55%。学校食堂量化等级、学校类型、消毒方法是影响餐饮具消毒合格率的主要因素。结论海安县学校食堂餐饮具消毒整体状况好于社会餐饮业且呈逐年上升趋势。今后在学校食品安全卫生监督管理工作中,应加大对小学、初中以及C级食堂的监督监测力度,强化餐饮具消毒人员培训,推广湿热(蒸气、煮沸)消毒、热风循环消毒柜和洗碗机的普及使用,提升全县学校食堂餐饮具消毒整体水平。
Objective To master the school cafeteria Haian disinfection work dynamic, understand the school canteen tableware disinfection qualified, to provide the basis for the school food safety and hygiene supervision. Methods to collect and organize the 2009-2012 school cafeteria Haikou supervision monitoring sampling relevant information, statistical analysis. Results In 2009-2012, a total of 684 dining utensils were checked in school canteens in the county, with a pass rate of 628, with an average pass rate of 91.81%. The lowest in 2009 was 86.39% and the highest in 2012 was 97.55%. Quantification of school canteens level, school type, disinfection methods are the main factors that affect the rate of pass disinfection tableware. Conclusion Hai’an school canteen dining utensils disinfection overall better than the social catering industry and showed a rising trend year by year. In the future school food safety and health supervision and management, should increase supervision and monitoring of primary, junior high school and C-class canteens, strengthen the training of disinfection of tableware, hot and humid (steam, boil) disinfection, hot air circulation disinfection cabinets and dishwashing Machine popularization and use, improve the school canteen dining utensils disinfection overall level.
