目的了解池州市食品微生物污染情况,为预防和控制食源性疾病提供科学依据。方法按照国家标准检验方法进行食品采样和致病菌检测。结果 2014~2015年池州市检测7类共215份食品样品,29份样品检出致病菌,总检出率13.49%。其中致泻性大肠埃希氏菌检出率19.57%、金黄色葡萄球菌检出率6.11%、单核细胞增生李斯特氏菌4.32%、沙门氏菌检出率1.40%、副溶血弧菌未检出。7类食品中外卖配送餐致病菌检出率45.45%,学生餐为20.83%,生肉(畜、禽)为16.67%,调理肉制品为6.67%。动物性水产品(预制、熟制)、坚果与籽类的泥、调味品均未检出致病菌。定型包装食品未检出致病菌,散装食品致病菌检出率19.46%,差异有统计学意义(χ2=14.85,P<0.01)。结论池州市居民消费食品中存在一定程度的食源性致病菌污染,外卖配送餐和学生餐是主要污染品种,可能导致较高的食源性疾病风险。
Objective To understand the microbial contamination in food in Chizhou and to provide a scientific basis for the prevention and control of foodborne diseases. Methods According to the national standard test method for food sampling and pathogen detection. Results A total of 215 food samples of 7 categories were detected in Chizhou from 2014 to 2015. Pathogenic bacteria were detected in 29 samples with a total detection rate of 13.49%. Including diarrhea Escherichia coli detection rate of 19.57%, Staphylococcus aureus detection rate of 6.11%, Listeria monocytogenes 4.32%, the detection rate of Salmonella 1.40%, Vibrio parahaemolyticus was not detected . The detection rate of food-borne pathogens in take-out and delivery of 7 kinds of food was 45.45%, that of student meal was 20.83%, that of raw meat (livestock and poultry) was 16.67% and that of meat products was 6.67%. Animal aquatic products (prefabricated, cooked), nuts and seeds of the mud, spices were not detected pathogenic bacteria. There was no detectable pathogenic bacteria in the packaged food, the detection rate of pathogenic bacteria in bulk food was 19.46%, the difference was statistically significant (χ2 = 14.85, P <0.01). Conclusion There is a certain degree of food-borne pathogens contamination in the food consumed by residents in Chizhou City. Take-out delivery meal and student meal are the main pollutants, which may lead to higher risk of food-borne diseases.
