在农业生产上,往往出现这样一种情况:农作物的产量增加了,但产品的品质却下降了,人类及其饲养的家畜、家禽并未从这些食物中摄取更多的营养,相反,还常常带来一些不良的后果。因此,目前许多农业工作者主张作物产量的增加和品质的改善应该并重,而在某些情况下,改善农产品的品质更为重要。在评价农产品的品质时,必须从各方面的性质来衡量。对它的评价至少必须包括下述三个方面:(一)从生物学价值来看,农产品的品质就是指营养价值,即是说品质好的农产品应该含有生物学价值高的各种营养物质;(二)农产品的色、香、味等;(三)农产品中是否存在有毒的化学物
