匙吻鲟又称鸭咀鲟、匙吻白鲟,是美国特有的一种大型经济鱼类,属世界珍稀动物。由我公司于1990年首次独家引进并试养成功。匙吻鲟隶属鲟形目、白鲟科、匙吻鲟属,最大个体重达80公斤。匙吻鲟体形如梭,体表裸露,泽润无鳞。吻呈桨状,吻长约为体长的三分之一。刚孵出时无吻,体长约8～9毫米,形如蝌蚪,经30～40天后吻逐渐发育完全。口下位且不能伸缩,眼较小,鳃盖膜大而厚延至腹鳍,形如象耳;骨为软骨,消化道短(约为体长的56％)。
